What Makes Us Different
We’re a small, family-run farm in Colorado specializing in meat shares and custom processing. Tradition and quality are at the heart of everything we do.
Our goal is simple: to give our customers back as close to 100% of the hanging weight as possible — whether it’s from our own animals or from yours. Most processors return only about 60% of the hanging weight, but we believe in honoring the whole animal and minimizing waste, just as farmers did for generations before us.
That means you take home more of what you’ve paid for — the best cuts, usable bones, and rendered fat — along with support in learning how to make the most of it. We send our customers home with recipes and offer seasonal cooking courses that teach modern families how to prepare traditional cuts and use every part of the animal well.
Our Unique Approach
- We render fat and suet — our beef customers go home with beautiful jars of tallow.
- We cut bones into usable pieces, perfect for broth and cooking.
- We avoid excessive trimming, preserving flavor, yield, and nutrition.
